Chocolate chip cookies to brighten up your Monday...

We had friends over for the weekend so I decided to use this as a valid reason as to why I should ignore the mountain that is our laundry pile and instead bake some sweet treats.



I have a little notepad which is my treasure trove of recipes. It all started with me copying out my mum's recipes - no one can beat her flapjack (just so's you knows) - and it's gradually been added to along the years. I have a cookie recipe in there...I can't remember where it came from but it's delicious - crisp on the edges and oh so gooey in the middle. I personally think you should get out your little notebook and copy it down right now.



Another plus is that it makes lots of cookies...well, that's depending on how strong you are in resisting the urge to just eat the cookie dough (not very) and how good your aim is when accidentally flipping a load of cookie dough up into the air and into the black hole that is the 2 inch gap between the counter and the fridge/freezer (very good). But let's go with 16 - 20.

Double chocolate chip cookie

Ingredients
240g plain flour
2tsp baking powder
150g soft brown sugar
110g caster sugar
1tsp vanilla essence
1/4tsp salt
150g butter
1 egg, beaten
250g chocolate, roughly chopped

1) Cream the butter and sugar together until well combined.

2) Add the vanilla essence and egg, mixing well.

3) Combine the flour, baking powder and salt together and sift into the bowl. Mix well to form a dough.

4) Stir in the chocolate pieces.

5) Leave to rest for 12 - 24 hours (optional)

6) Roll into golf sized balls and place onto a lined baking tray. Slightly flatten each ball with your hand.

7) Bake in a preheated oven at 180 degrees celcius for 9 - 12 minutes. Remove from oven as soon as the edges start to turn a light golden brown. The cookies will look unready but they will turn into the most gooiest and delicious cookies as they cool. Leave to cool for 2 minutes and then transfer onto a cooling rack to cool completely.
